One subject they are not covering is lifting "rolling" slow speed corners. Between heavy trail braking and learning to lift in a turn to maximize corner speed, you start defending better with little or no sacrifice of lap times. If your able to increase throttle during the mid-corner without driving off the track then you are entering way too slow. It is difficult to teach and easy to get wrong, thus being slower than the traditional get on the throttle at the apex. That method is a big portion of what separates pro drivers from weekend amateurs.
The best lesson this year for me is change one thing at a time and organize your plan of how to test/analyze results. Data is critical as long as you be very detailed on the results.
